The embedded heat sensors detect this drop in heat and compensate for it by rapidly injecting heat to recover the temperature back to the desired grilling temperature.
The grilling plates are powered by an 1800 watt heating design, which delivers maximum heat to the grill plates for a reduction in preheating time and faster cooking overall, while allowing for the sizzle and sear you would expect from an outdoor grill. One of the grilling plates is flat, and the other grilling plate is ribbed to achieve the perfect sear marks on your meats.
The two grilling plates are interchangeable in terms of their position, and the grill can be used either as a contact grill (similar to a panini press) with both the top and the bottom plates in contact with the food or as a flat barbecue grill when opened to lie flat. The result of the innovation and cooking excellence seen in the Breville is a machine that is as quickly and easily cleaned as a frying pan but which grills as well as a barbecue does. Although this electric indoor grill from Breville may not achieve the 700 degrees F cooking temperatures of a charcoal grill or the 500 to 550 degrees F temperature of a gas grill, it does come reasonably close, offering a top temperature of 450 degrees F, which is enough to achieve a decent sear on your steaks.
