Grilled Lobster Tail

Description

I have made this garlic-herb butter with all of my homemade seafood for years. You can make the sauce right on the grill next to the lobster, in just about the same amount of time it takes for the crustacean to cook through.

Ingredients

  • 4 medium-sized lobster tails
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Pinch of cayenne
  • Salt and pepper to taste
  • 1 stick unsalted butter
  • 3 whole lemons, halved
  • 5 cloves garlic, minced
  • A few dashes of hot sauce
  • A few dashes of Worcestershire sauce
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tbsp fresh parsley leaves, chopped


Instructions

  1. Begin by trimming up your lobster, using either the Fancy Method or the Halved method. If halving, make sure you have enough room for 8 lobster tail halves.
  2. In a small bowl, toss together the garlic powder, paprika, cayenne, and salt and pepper to taste. Sprinkle over the lobster meat and set aside.
  3. In a grill-proof saucepan or aluminum pan, melt a stick of butter over the grill as it heats. Add your lemon halves and garlic to the butter. Add hot sauce and Worcestershire sauce along with the salt and pepper. Allow this mixture to melt all together while you add the lobster tails to the grill.
  4. Drizzle the garlic butter lightly over the top of the lobster meat once or twice during the cooking process. Right before they are done, remove the lemon halves from the butter and place cut-side down lemons directly onto the grill. Allow the lemons to char for 1 minute.
  5. Cook lobster tails 1 ½-2 minutes per ounce, or until an instant-read thermometer measures 140°F. Remove from the heat and plunge the lobster tails into the garlic butter. Top with fresh parsley and serve with the grilled lemon halves for extra lemon flavor.
