Vegetarian Ideas for BBQ

Labor Day is a wonderful time to gather friends and family together for BBQs and picnics. Even if you are not a vegetarian, I would suggest having one or two vegetarian dishes on hand, as more and more people are choosing a vegetarian lifestyle. Here are a few quick and easy vegetarian recipes for your Labor Day get-together.

Tortilla Chips with Creamy Salsa Dip

This vegetarian recipe is very quick and easy to make and yet it is always a huge hit at parties. Take 1 cup of sour cream (you can use low-fat sour cream if desired) and mix it with 1 cup of chunky salsa. Chill in the refrigerator for at least 2 hours. Serve with multi-colored tortilla chips.

Fruit Kebabs

A great choice for Labor Day picnics, fruit kebabs are a treat that is popular with kids and adults alike. You’ll need to purchase some bamboo skewers and several kinds of fruit. I like to use grapes, strawberries, and blackberries but almost any kind of fruit can be used. You’ll need a small bunch of grapes, a carton of strawberries, and a carton of blackberries.

First wash the fruit and pat it dry. Next cut the strawberries into halves or quarters (so they are about the size of your grapes). Take a wooden skewer and gently push it through a grape. Next push a strawberry piece onto the skewer followed by a blackberry. Continue pushing fruit onto the skewer, leaving about two inches free of fruit at the bottom of the skewer for a finger-hold.

To make these vegetarian goodies even yummier, you can serve them with a honey yogurt dip. Mix 1 cup of plain yogurt with 3 tablespoons of honey and 1 teaspoon of cinnamon. Keep in the fridge until it is time to serve.

Vegetarian Chopped Salad

As Labor Day is usually quite a warm day you may want to skip the barbecue and stick with something cool such as a salad buffet. A Vegetarian Chopped Salad is a delicious salad that can be used as a main or a side dish. You’ll need a bag of prepared salad greens, 4 ounces of cheddar cheese, 1/2 cup pecan pieces, and a red bell pepper. First dice the bell pepper into small pieces and grate the cheddar cheese. Put the salad greens in a bowl and then toss in the cheddar cheese, pecan pieces, and diced bell pepper. Keep chilled until time to serve. We like Italian dressing with this salad but feel free to use your favorite dressing.
